I created this blog many years and didn’t do much with it. Kinda forgot about it. In the hustle and bustle of working and living. 15 years ago actually, the year I graduated high school. So much has changed. My mom passed October 11th 2024. She was the person that taught me how to bake. This recipe is in her honor. One of the things I always baked that she loved was banana bread and banana muffins. Been using the same banana bread recipe for years. I remember visiting with this sweet little Italian lady from church, Sister Manelli and watching the food network channel and my sister writing down the banana bread recipe . So I used that for the base and decided to change it up a bit this time and added toasted coconut, mini chocolate chips, and sliced almonds for a new spin. Almond Joy was my mom’s favorite candy bar. Wish I had thought to try this while she was alive. My mom loved baking up until she was unable to because of her stroke and health issues. She shared her Joy of baking with my sister and I. She especially loved sharing her baked goods with others and spreading JOY one baked good at a time.
Recipe
3 Ripe bananas
3/4 cup sugar
1 egg
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 stick melted butter
1/2 cup toasted coconut
1/2 cup mini chocolate chips
Additional sweetened shredded coconut and sliced almonds to put on top.
Bake at 325 F for 20 minutes or until golden
